Star Anise Syrup

- 1/2 cup of sugar
- 4 whole star anise
- juice of 2 limes
- 1 cup of water
Place all ingredients in a small pot. Bring to the boil, then turn heat down and simmer approx 10 minutes until thickened to a light syrup.
Allow to cool.
Can be used as a drizzle over fruit salad or as a a syrup in a star anise flavoured mojito or margarita. YUM!!
